The trenette and income are a typical pasta genovese based on durum wheat semolina and integral flour. Worked by hand and dried slowly at a low temperature, they are rough to hold the sauce and the full-bodied flavor. A dish of the peasant tradition, a source of fibre, served with pesto sauce accompanied by potatoes and green beans. Also great with tomato sauce with walnuts or fish. The cooking time is about 8 minutes.
