The pastificio Ears of Molise was founded in 2002 in the heart of Italy that is still pure and uncontaminated. Pasta Ears in Molise are handmade and curated in every stage of production, from the selection of the flour to the finished product. The flour, only durum wheat of first quality, comes from the heart of the grain of wheat; the peculiarity is the total absence of bran or black spots, usually present in the bran when the grain is processed for the entire. The dough, made only with semolina top and water is not added, no preservative or dye. The production process of dry products is very slow and delicate, the pasta is dried slowly in kilns at low temperatures, so as to ensure a uniform evaporation of the water to not damage the product, and the nutritional content and protein in the dough, making it highly digestible, suitable for every age group.
